Guar gum is well soluble in cold and hot water and organic solvents, is compatible to the majority of other vegetable hydrocolloids, such as agar, carob tree gum, pectin, methyl cellulose, etc. On average, guar gum contains 80% of galaktomannan, 12% of water, 5% of protein, 2% not of soluble deposit in acid or crude fibers, 0,7% of ashes, 0,7% of fat, traces of heavy metals, does not contain arsenic and lead. The main active ingredients of guar gum are galaktomannan also fatty acids. Guar gum is received by extraction from Cyamopsis tetraganoloba plant seeds - the leguminous culture known as guar (pea tree, the Indian acacia). Guar gum, gum of guar, guar, guaranas - food supplement of E412, belongs to group of stabilizers. Guar gum (viscosity 5000 spz and 3500 spz, in standard solution) is used in the food industry as the stabilizer of consistence and possesses the following properties: - increase in viscosity; - zheliruyushchy properties. The main property of guar gum is ability to slow down crystallization of ice in different frozen goods thanks to what especially often it is applied in ice cream or in production of the various cooled confectionery. Also as the stabilizer the additive of E412 can be applied in the meat industry, baking production, increasing expiration date of products and giving them big elasticity and density. Besides, the additive is used as the stabilizer for cheeses and some other dairy products (kefir, yogurt, milk), and also in jelly, jams and the frozen desserts. It improves appearance of different salads, seasonings and ketchups. Also it contains in syrups and juice, different food concentrates, dry soups, canned fishes, in different oils, fats and even in pet food. Guar gum is used in the meat-processing industry as the stabilizer of consistence and possesses zheliruyushchy and increasing viscosity properties. It is considered that it is practically not soaked up in intestines and promotes reduction of appetite and very effectively reduces the level of saturated fats in organism.
